Satay chicken rice paper rolls


These rice paper rolls are the perfect healthy and light lunch or dinner for the whole family. The home-made satay dipping sauce just makes it even more wonderful. You have to take your time to make it but it's really worth it! For gluten-free version please make sure all your ingredients are GF. Enjoy!

INGREDIENTS


Meat and dipping sauce:

1 tbsp coconut oil or vegetable oil

1 clove garlic finely chopped

2 pieces chicken breast fillet cut to small pieces

1 can coconut cream approx. 400 ml

3 tbsp peanut butter

3 tbsp soy sauce

1 tsp brown sugar


Filling:

2 medium carrots very finely sliced

1 medium cucumber very finely sliced

1 big capsicum very finely sliced

1 tbsp chopped mint leaves

1 pack rice paper roll approx.12 pieces

150 gr vermicelli noodles



INSTRUCTIONS


Fry the chopped garlic in the coconut oil then add chicken cubes and cook until the meat is cooked through.

Add coconut milk, peanut butter, brown sugar and soy sauce and bring to simmer. (You might need to add a bit of water if it's too thick- you'll see it.)

Take the meat out of the sauce and put aside to cool down. Do the same with the sauce.

Meanwhile, heat up some water and put the vermicelli in for 2-3 minutes, then drain and put aside.

Grab a flat dish or pan, pour warm water in and grab a rice paper roll. Soak it in for 30 seconds then take it out and put on a plate.

My secret is that I put baking paper on my plate so the rice paper won't stick to the plate and it will make it easy to roll up. Start filling the rolls by putting the vermicelli, the finely chopped vegetables, the mint and the meat on top and start rolling them. Fold in edges then roll up to enclose filling.

Start with one, put aside and do the next one. (Do not soak the rice paper together or else it will stick together and you can throw it in the bin. )

When you are ready with all the rolls, cover them with baking paper or a damp tea towel to prevent them from drying out. Serve it or you can keep in the fridge if you like it cooler. Don't forget the beautiful sauce we put aside for dipping!
