Spinach – cottage cheese muffins | gluten free

Servings muffins


INGREDIENTS


250 gr cottage cheese

100 gr gluten free flour

150 gr almond meal

1 cup spinach leaves

2 tsp chopped chives

1 tsp baking powder

75 gr Parmesan cheese

3 tbsp sunflower oil

4 large eggs beaten

2 tbsp cold water

salt and papper


INSTRUCTIONS


Mix all dry ingredients together in a bowl

Add the oil, beaten eggs, water, half of the cheese and mix together.

Line a 12 whole muffin tin with paper muffin cases and spray them with a bit of oil spray to avoid muffins stick to the paper

Spoon the batter into the cases and sprinkle the top with the remaining cheese

Bake in a preheaten oven ( 200 Celcius ) for 30-35 minutes until rise and golden.

Serve warm or cold. Enjoy!
